Authentic French Recipe: Crêpes


Step 1:
Ingredients













  • 1 cup all-purpose flour
  • 2 tablespoons butter, melted
  • 2 eggs
  • 1/2 cup milk
  • 1/2 cup water
  • 1/4 teaspoon salt

Step 2:
In a large bowl, whisk together the flour and the eggs.














Step 3:
Gradually add in the milk and water, stirring to combine. Add the salt and butter. Beat until smooth.
*NOTE: take a teaspoon of batter and pour into melted butter BEFORE pouring into larger batter. This will temper the hot butter so it won't curdle your eggs and milk.

















Step 4:
Heat a lightly oiled griddle or frying pan over medium high heat.

















Step 5:
Pour or scoop the batter onto the pan, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly. Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve hot.
















Step 6:
ENJOY!!!
I folded my crepes in half, to form a half circle, then folded one side over the other, to make a triangle. Then I put fruit in the middle, sprinkled with powdered sugar. You may but chocolate or whipped cream, if you'd like.
