Authentic Italian Recipe: Biscotti


Preheat oven to 350 degrees.



Step 1:
Ingredients: 
  • 1 cup chopped pistachios*
  • 2/3 cup white sugar
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract**
  • 1/4 teaspoon salt
  • 1 3/4 cup all-purpose flour
* You may substitute with almonds or hazelnuts
** You may substitute with almond extract


Step 2:
Sift flour, baking powder, and salt in large bowl. This will be your "dry" mix.


















Step 3:
Beat sugar and eggs in bowl until thick. This takes about 1-2 minutes. Then add vanilla extract. This is your "wet" mix.


















Step 4:
Add wet mix to dry mix until combined. Fold in chopped pistachios. 


















Step 5:
Place dough on cookie sheet lined with parchment paper. Form into log shape. Bake for 25 minutes.


















Step 6: 
Take log out of oven, let cool on wire rack for 10 minutes. In the meantime, reduce over temperature to 325 degrees. 














Step 7:
After log cools, cut diagonally in about 3/4 inch sections. Use a "serrated knife" to cut diagonally. When cutting, do not press down to cut. Cut back and forth, and let the knife gradually make the cut. After, place biscotti cut-side down on baking sheet. Bake 10 minutes. Turn over slices, then bake for another 10 minutes.
